After trimming, the roast goes to slicers then to the sandwich makers.Brian Postle carries another bundle of wood to the pit to make a bed of coals for the Ox Roast. A layer of sand is placed over the coals before foil wrapped roasts are placed in the pit then covered with sheet metal and more sand to create an in-ground oven.
