Scenes from West Jefferson’s Ox Roast, held Sept. 1-3 at Garrette Park:

Joe Denes trims fat from an eye-of-round beef roast after it is removed from the pit. After trimming, the roast goes to slicers then to the sandwich makers.
Brian Postle carries another bundle of wood to the pit to make a bed of coals for the Ox Roast. A layer of sand is placed over the coals before foil wrapped roasts are placed in the pit then covered with sheet metal and more sand to create an in-ground oven. A total of 5,000 pounds of eye-of-round beef was roasted for sandwiches served on Labor Day.
