Pizzelles

Pizzelles, a traditional Italian cookie, were among my father’s favorite treat at the holidays.

PIZZELLES
6 eggs
1 cup sugar
1 cup oil
2 cups flour
1 teaspoon lemon extract or 1/4 teaspoon anise oil or 1 teaspoon vanilla

Beat the eggs until they are light and fluffy. Add sugar gradually and continue beating until the sugar is dissolved. Beat oil in a little at at time. Continue beating until batter is smooth. Add the flour a little at a time and make sure the flour is mixed in well. Spoon onto a greased and pre-heated pizzelle iron. Bake until lightly browned.
